  • 125grams cherry tomatoes
  • 5milliliter virgin olive oil spray
  • 1 pinch freshly ground black pepper
  • 60grams ricotta
  • 2 slice bread, toasted

Method

Step 1 of 4

Preheat oven to 200°C. Line a baking tray with baking paper.

Step 2 of 4

Place tomatoes on tray. Spray with oil and season with freshly ground black pepper. Roast for 15 minutes or until starting to soften.

Step 3 of 4

Shred basil (reserving a few small leaves) and combine with ricotta. Season with pepper. Spread ricotta mixture over toast.

Step 4 of 4

Put toast onto plate. Top with tomatoes and sprinkle with reserved basil leaves to serve.
