  • 2tablespoons plain flour
  • 20grams butter
  • 1 cup skim milk
  • 5milliliter virgin olive oil spray
  • 450grams frozen mixed green vegetables, steamed (to serve)
  • 2 leeks, trimmed, white part only thinly sliced
  • 8 sheet sheets filo pastry
  • 1tablespoons white sesame seeds
  • 750grams ocean trout, skin and bones removed, cut into 3cm pieces
  • 1tablespoons olive oil
  • 1 pinch sea salt flakes
  • 1/4 cup dill sprigs, finely chopped

Method

Step 1 of 9

Heat butter and oil in a non-stick frying pan over medium heat. When butter has melted, add leek and cook for 4 minutes or until soft.

Sprinkle flour over and stir until well combined. Cook for 1 minute.

Step 3 of 9

Remove pan from heat and slowly stir in milk until smooth. Return to heat and stir until mixture comes to the boil.

Add trout and cook for 1-2 minutes or until trout is just cooked. Stir in dill and set aside to cool.

For the pastry, preheat the oven to 200°C. Line a baking tray with baking paper. Place a sheet of filo onto a flat surface. Spray with olive oil and top with another sheet of filo.

Fold filo stack in half, short edge to short edge. Spoon 1/4 trout mixture along one long edge leaving a 4cm border on each side.

Roll over, fold in sides and continue to roll up enclosing filling. Place onto prepared tray. Repeat with remaining.

Spray with olive oil and sprinkle with sea salt flakes and sesame seeds. Bake for 20-25 minutes or until golden and crisp.

Serve with a warm salad of steamed peas, snow peas and beans.
