  • 2tablespoons red wine vinegar
  • 100grams rocket leaves
  • 4 slice ciabatta bread
  • 4tablespoons small black olives
  • 8tablespoons olive oil
  • 1/2 bunch fresh thyme leaves
  • 1 fresh chilli
  • 1 clove garlic

Method

Step 1 of 10

Preheat oven to 220°C.

Step 2 of 10

Cut the crusts off the bread.

Step 3 of 10

Wash and dry the rocket.

Step 4 of 10

Split the chilli in half lenghways, remove and discard the seeds and finely chop.

Step 5 of 10

Peel the garlic.

Step 6 of 10

Put the bread in a roasting tin, drizzle with olive oil and toast in the oven for 5 minutes.

Step 7 of 10

Turn over, drizzle with a little more oil and cook until golden. Rub the toasted slices with the garlic.

Step 8 of 10

Combine the red wine vinegar with 6 tablespoons of olive oil and season.

Step 9 of 10

Put the olives in a bowl with the chilli, thyme and 1 tablespoon of olive oil.

Step 10 of 10

Break up the bread and put in a bowl with the rocket. Toss with the dressing. Add the olives.
