  • 500grams turkey
  • 1teaspoons garlic
  • 2teaspoons chilli , paste
  • 500milliliter vegetable or chicken stock
  • 1 can tomatoes, diced
  • 1 can chickpeas , drained and rinsed
  • 1 medium sweet potato, peeled and roughly chopped
  • 100grams mushrooms, sliced
  • 1tablespoons oil
  • 1 sour cream
  • 1 medium onion, diced
  • 1/2 green pepper/capsicum

A tasty and hearty turkey chilli. Perfect for winter.

Method

Step 1 of 3

Cooking on a high heat, heat the oil in a pan deep pan (eg casserole pot or stock pot) and brown onions. Add the garlic and chilli paste. I have used chilli paste, but you can use chilli seeds or fresh chillies. Add the turkey and cook, flipping until brown on each size.

Once the meat has sealed, add the vegetables (chickpeas, mushroom, sweet potatoes and capsicum) and toss through. Add the stock and diced tomatoes and stir through to ensure it's evenly coated. Reduce heat to a low heat and cover with a lid. Cook for one hour. Stir through a few times.

Step 3 of 3

After an hour, uncover the pot. Using two forks, shred the turkey. It should c9me apart fairly evenly. If you want to add any extra spices (eg hot sauce, peri peri, Tabasco - do this now so can adjust the flavour to your taste.) Stir through and cover the pot again with a lid. Cook for a further hour - stirring when needed. Serve with rice and top with sour cream.
