Troy and Marty's Sweet Potato & Corn Fritters

10 Ingredients
- 200grams smoked salmon
- 1/4 pumpkin Kent, peeled and grated
- 1 sweet potato, peeled and grated
- 2 corn on the cob, corns removed and chopped
- 1/2 cup tzatziki sauce
- 1 pinch black pepper
- 1 egg
- 1/4 cup chives, chopped
- 1 pinch sea salt ground (to taste)
- 1/2 cup chickpea flour
Method
Step 1 of 3
Mix all the fritter ingredients in a bowl.
Step 2 of 3
Use a teaspoon of mixture to make each fritter. Put as many as you can in the pan, leaving some space between each so they don’t stick.
Step 3 of 3
Top the fritters with tzatziki then salmon then chives.
