Quinoa & Goat's Cheese Fritters

- 200grams smoked salmon
- vegetable oil (to shallow fry)
- 1/2 cup red capsicum, finely chopped
- 3 spring onions, chopped
- 1 corn cob, kernels removed
- 120grams goats cheese
- 1/4 cup spelt flour
- 60grams rocket leaves
- 1 egg, whisked
- 1/2 cup tricolour quinoa
Method
Step 1 of 4
Rinse quinoa in a sieve under running water. Place in a small saucepan with 1 cup water and bring to the boil. Reduce heat to low, then cover and simmer for 20 minutes or until tender and water is absorbed. Transfer quinoa to a bowl. Set aside to cool.
Step 2 of 4
Combine corn, capsicum, spring onion and flour with quinoa. Season.
Step 3 of 4
Mash 80g of the cheese in a small bowl. Stir in egg. Combine with quinoa mixture.
Step 4 of 4
Heat oil in a non-stick frying pan over medium heat. Add 3-4 large spoonfuls of mixture to pan and cook for 3 minutes on each side or until golden and crisp. Repeat with remaining mixture. Serve with the salmon, rocket and remaining goat’s cheese crumbled over.
