  • 1 cup sushi rice, rinsed
  • 1tablespoons rice wine vinegar
  • 6 sheets nori
  • 3/4 cup salt-reduced soy sauce
  • 1 cup mayonnaise
  • 1 large avocado, thinly sliced
  • 1tablespoons sesame seeds, toasted

Description

Make lunchtime fun with Hayden Quinn’s cute and easy hand rolls. Packed with sushi rice and a mayonnaise and avocado filling, make double so you’re ready when they ask for seconds.

Method

Step 1 of 2

Line a baking tray with baking paper. Cook rice following packet instructions. Use a spatula or wooden spoon to break up any lumps. Spread rice over the prepared tray, drizzle over vinegar and stir to combine. Set aside for 30 minutes to cool.

Step 2 of 2

For each roll, place 1 nori sheet, shiny-side down, onto a clean work surface. Wet your fingers slightly and then spread ½ cup rice over the centre of the nori, drizzle over 1 tsp soy sauce, spread over 1 tbs mayonnaise, top with avocado and ½ tsp sesame seeds. Roll to enclose. Serve with soy sauce, remaining mayonnaise and remaining sesame seeds for dipping.
