- 2 cups Woolworths thickened cream
- 1 vanilla bean, split, seeds scraped
- 1 cinnamon stick
- 3centimeters piece ginger, peeled, thinly sliced
- 6 cardamom pods, crushed
- 3 egg yolks
- 1/4 cup caster sugar
- 180grams white chocolate, finely chopped
Description
Elevate your festive dessert spread with this creamy anglaise, which features a harmonious blend of spices and white chocolate.

Swap tip:You can also use 1 tsp vanilla bean extract instead of vanilla bean.
Method
Step 1 of 4
Combine cream, vanilla bean and seeds, cinnamon stick, ginger and cardamom in a medium saucepan over medium-low heat. Bring to just below simmering point. Remove from heat. Cover and set aside for 10 minutes to infuse. Strain the mixture into a jug. Discard the solids.
Step 2 of 4
Using a balloon whisk, whisk egg and sugar in a bowl until thick and pale.
Step 3 of 4
Gradually whisk the warm cream mixture into the egg mixture. Return combined mixture to the saucepan. Stir constantly over low heat for 5 minutes or until the mixture thickens and coats the back of a spoon (do not allow to boil).
Step 4 of 4
Remove from heat. Add white chocolate. Stir until melted and smooth. Allow to cool slightly before serving.
