- 2.20kilograms Woolworths pork leg roast boneless
- 2teaspoons smoked paprika
- 1/4 cup extra virgin olive oil
- 1kilograms washed potatoes, halved
- 1/2 punnet sage, leaves picked
- 1teaspoons caraway seeds
- 1 small red cabbage, halved, shredded
- 500milliliter Campbell’s Real Stock Chicken Liquid Stock
- 2tablespoons balsamic vinegar
- 25grams unsalted butter
- 1 green apple, cut into matchsticks
- 250grams Gravox Roast Pork Liquid Gravy, heated
Description
Indulge in succulent roast pork perfectly paired with a rich, flavourful gravy and tender braised cabbage for a hearty and comforting meal.
Method
Step 1 of 3
Preheat oven to 240°C/220°C fan-forced. Using a sharp knife, score rind of pork. Pat pork dry with paper towel for the best crackling. Rub pork with paprika. Tie pork with kitchen string and place in a roasting dish. Drizzle pork with 1 tbs oil. Roast pork for 30 minutes or until rind blisters. Reduce oven to 200°C/180°C fan-forced.

Cook potatoes in a large saucepan of boiling water for 15 minutes or until just tender. Drain, toss in 1 tbs oil and add to dish with pork. Roast for 1 hour or until pork is cooked. Transfer pork to a plate. Cover and rest. Roast potatoes for a further 10 minutes or until golden brown.

Heat remaining oil in a large frying pan over medium-high heat. Add sage and cook for 30 seconds or until crispy. Transfer to a paper towel. Add caraway seeds to pan and cook for 30 seconds or until they pop. Add cabbage and cook, stirring, for 5 minutes. Add stock and vinegar. Bring to the boil. Reduce heat to low and simmer for 5 minutes or until liquid reduces. Stir in butter and apple. Serve pork with gravy, cabbage, potatoes and sage.
