Smashed Avocado & Bacon on Sourdough

- 2 avocados
- 1teaspoons smoked paprika
- 1 lemon, zested, juiced
- 8 eggs
- 350grams Primo Middle Rindless Bacon, cut into thirds
- 8 slices sourdough, grilled
- 200grams truss cocktail tomatoes, sliced
- 1/3 bunch basil, leaves picked
Description
Kick-off festivities with a vibrant breakfast of succulent bacon and smashed avocado on toasted sourdough.

Swap tip:Use Primo Chorizo instead of bacon if preferred.
Method
Step 1 of 3
Mash avocado, paprika, zest and 1 tbs juice in a bowl until almost smooth. Place eggs in a saucepan and cover with cold water. Bring to the boil, stirring. Boil for 7 minutes. Drain, then refresh under cold water. Peel and cut in half.
Step 2 of 3
Meanwhile, heat a large non-stick frying pan over medium-high heat. Add bacon and cook for 2-3 minutes each side or until cooked and browned.
Step 3 of 3
Spread avocado mixture over sourdough. Top with bacon, tomato and egg. Sprinkle with basil. Season with freshly cracked black pepper. Serve.
