  • 6 leftover soft round white rolls, split
  • 1tablespoons Dijon mustard
  • 100grams leftover sliced ham
  • 100grams brie, thinly sliced
  • 120grams baby spinach leaves
  • 1/2 cup finely grated tasty cheese
  • 8 eggs
  • 1 1/4 cup light thickened cream
  • 1/4 cup sage hollandaise sauce

Description

Indulge in a delightful brunch that transforms your festive leftovers into a satisfying meal. Soft bread rolls are filled with brie and sliced ham and topped with eggs, spinach, tasty cheese and hollandaise sauce in this eggs Florentine traybake.

If you don’t have any leftover hollandaise sauce, simply replace with 1/4 cup thickened cream.

Method

Step 1 of 4

Preheat oven to 180°C/160°C fan-forced. Spread cut-side of rolls with mustard. Divide ham and brie among rolls. Place in a 20x26cm rectangular baking dish. Press down on rolls to flatten slightly.

Step 2 of 4

Thinly shred 1 cup spinach. Scatter shredded spinach and half of the cheese around the rolls.

Step 3 of 4

Whisk eggs, cream and hollandaise sauce in a large jug until well combined. Season. Pour over the rolls. Push down on rolls to submerge. Sprinkle with remaining cheese. Bake for 50 minutes or until just set.

Step 4 of 4

Toss remaining spinach with dressing. Serve with traybake.
