- 1/4 cup extra virgin olive oil
- 8 large truss tomatoes
- 500grams cocktail truss tomatoes
- 3 Woolworths garlic heads
- 1/4 punnet thyme, sprigs picked
- 250grams mozzarella, drained, cut into 8 thick slices
- 1/2 Woolworths rustic white baguette, thickly sliced diagonally, toasted
Description
Step up your side dish game with this medley of roasted tomatoes with mozzarella and garlic that’s affordable and easy to make.
Method
Step 1 of 3
Preheat oven to 220°C/200°C fan-forced. Brush a 30x40cm baking dish with 1 tsp oil to grease.
Step 2 of 3
Separate large tomatoes, keeping stalks intact. Cut tomatoes in half. Using kitchen scissors, cut cocktail tomatoes into smaller clusters. Cut garlic bulbs in half. Arrange tomatoes and garlic in prepared dish. Drizzle with remaining oil. Scatter with half of the thyme.

Roast for 25 minutes or until garlic and tomatoes are soft and their skins start to blister. Remove from oven. Nestle mozzarella between tomato to allow mozzarella to soften slightly. Scatter with remaining thyme. Serve with bread.
