  • 4 small red onions
  • 1/4 cup Woolworths balsamic vinegar
  • 2tablespoons extra virgin olive oil
  • 1tablespoons Woolworths smoked paprika
  • 1/3 punnet thyme
  • 4 single chicken breast fillets
  • 2 yellow peaches, thinly sliced
  • 125grams brie, sliced

Description

Savour the delicate sweetness of peaches and the tangy creaminess of brie wrapped in tender chicken and glazed with balsamic onion. This festive main will certainly delight tastebuds and elevate any gathering.

Prep tip:
You can assemble the chicken pieces with peach and brie in step 3 up to 1 day ahead, then place in fridge. Continue from the end of step 2, rubbing with oil mixture.

Method

Step 1 of 4

Peel onions and carefully slice into 8 portions, without slicing all the way through. Place in a large bowl with balsamic vinegar. Toss to combine. Set aside.

Step 2 of 4

Preheat oven to 190°C/170°C fan-forced. Combine oil, paprika and 1 tbs chopped thyme leaves.

Step 3 of 4

Carefully slice chicken in half horizontally, without slicing all the way through. Fill chicken with peach and brie. Rub oil mixture over the top of chicken and season.

Step 4 of 4

Place chicken in a large baking dish with onions, drizzling onion with remaining vinegar from the bowl. Bake for 40 minutes or until chicken is cooked through and onions are tender. Sprinkle with remaining thyme sprigs and picked thyme leaves. Serve.
