  • 400grams Zafarelli spiral pasta
  • 250grams Birds Eye Australian Garden Peas Field Fresh
  • 2teaspoons extra virgin olive oil
  • 113grams Plumrose leg ham, thinly sliced
  • 300milliliter Woolworths light thickened cream
  • 1 lemon, zested, juiced
  • 1/4 bunch mint, leaves picked, large leaves coarsely torn

Description

A simple yet flavourful pea and ham pasta dish that's easy on the wallet and big on taste.

Method

Step 1 of 4

Cook pasta following packet instructions, adding peas in the last 2 minutes. Drain. Return to the saucepan.

Step 2 of 4

Meanwhile, heat oil in a medium saucepan over medium heat. Add ham. Cook, stirring often, for 5 minutes or until light golden. Add cream and bring to a simmer. Reduce to medium-low. Simmer for 2 minutes to thicken just slightly.

Step 3 of 4

Transfer ¼ cup of the cream sauce to a small bowl. Add lemon juice. Mix until well combined. Stir back into the sauce in the saucepan. Add half of the zest. Mix until well combined. Season.

Step 4 of 4

Add sauce and half of the mint to pasta mixture. Mix until well combined. Divide among serving dishes. Top with remaining zest and mint. Serve.
