  • 2teaspoons extra virgin olive oil
  • 550grams Woolworths herb & garlic beef sausages
  • 1/2 Woolworths rustic white baguette, sliced diagonally into 2cm-thick slices
  • 1 garlic clove, halved
  • 420grams Woolworths canned no-added-salt lentils, drained, rinsed
  • 270grams Woolworth beetroot & feta salad kit

Description

This hearty sausage and lentil salad with crispy garlic bread croutons makes a satisfying, budget-friendly dinner.

Method

Step 1 of 4

Heat 1 tsp of oil in a large frying pan over medium heat. Cook sausages following packet instructions. Thickly slice.

Step 2 of 4

Meanwhile, toast bread slices in a toaster in batches. Place on a large plate or board. Drizzle with the remaining oil. Rub the cut side of the garlic clove over the bread. Tear bread into coarse pieces.

Step 3 of 4

Place sausage, bread, lentils, salad leaves and half the dressing, walnut and feta in a large bowl. Season. Toss to combine.

Step 4 of 4

Divide among serving bowls. Top with remaining feta and walnut. Drizzle with remaining dressing.
