- 2teaspoons extra virgin olive oil
- 1 red capsicum, thinly sliced
- 1 red onion, thinly sliced
- 400grams Edgell black beans, drained, rinsed
- 263grams Old El Paso tortilla nachips original
- 75grams Perfect Italiano Mexican-style grated cheese
- 150milliliter Woolworths light sour cream
Description
Nachos never disappoint! For veggie lovers and vegetarians alike, you can’t go wrong with this flavour-packed black bean nacho dish.
Method
Step 1 of 4
Preheat oven to 200°C/180°C fan-forced. Heat oil in a large frying pan. Add capsicum and onion. Cook, stirring often, for 3 minutes or until soft.
Step 2 of 4
Add beans to the frying pan. Toss to heat through. Season.
Step 3 of 4
Layer half of the chips, bean mixture and cheese in a 20x25cm baking dish or 4 individual ovenproof dishes. Repeat the layers with the remaining chips, bean mixture and cheese. Bake for 10 minutes or until the cheese starts to melt.
Step 4 of 4
Serve topped with sour cream.
