  • 4 Woolworths tortillas
  • 400grams Woolworths diced Italian tomatoes with onion, garlic & basil
  • 1teaspoons Woolworths smoked paprika
  • 800grams refried beans
  • 400grams Woolworths no-added-salt kidney beans, rinsed
  • 1 large truss tomato
  • 1 avocado, diced
  • 125grams Woolworths shredded tasty cheese
  • 1/3 bunch coriander, leaves picked
  • 5mL extra virgin olive oil cooking spray

Description

Add a dash of Mexican-inspired flair to your weeknight meal with these budget-friendly nachos bowls brimming with refried beans and a sprinkle of tasty cheese.

Use-it-up tip:
Use sliced white bread instead of tortillas to line Texas muffin pan holes. If you don’t have a Texas muffin pan, you can use a regular muffin pan instead.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Lightly grease a 1-cup-capacity Texas muffin pan with oil. Microwave tortillas for 20 seconds or until soft.

Step 2 of 4

Press a tortilla into each prepared tray hole, folding to fit. Spray with oil and bake for 8-10 minutes or until lightly golden. Allow to cool in tray.

Step 3 of 4

Meanwhile, add canned tomato and paprika to a large frying pan over medium heat. Simmer for 10 minutes or until reduced slightly and thickened. Add refried beans and half of the kidney beans and cook, stirring, for 2 minutes or until heated and combined.

Step 4 of 4

Coarsely chop tomato. Spoon refried bean mixture into tortilla cups. Top with chopped tomato, avocado, cheese and remaining kidney beans. Serve sprinkled with coriander.
