  • 3 sweet potatoes
  • 1teaspoons Woolworths Cajun spice seasoning
  • 420grams Woolworths no-added-salt chickpeas, drained, rinsed
  • 1/2 cup couscous
  • 1 lemon
  • 120grams Woolworths leafy mixed salad
  • 420grams Woolworths no-added-salt lentils, drained, rinsed
  • 1 small red onion
  • 100grams Woolworths Greek-style feta
  • 2tablespoons extra virgin olive oil

Description

Revel in the hearty flavours of this vibrant salad, where sweet potato meets couscous and lentils for a filling and colourful bowl of goodness.

Method

Step 1 of 4

Preheat oven to 200°/180°C fan-forced. Grease and line 2 baking trays with baking paper. Cut potato into 1cm-thick chips. Spread potato in a single layer in a prepared tray. Drizzle potato with 2 tsp oil, then sprinkle with seasoning to coat.

Step 2 of 4

Spread chickpeas in remaining tray. Drizzle with 2 tsp oil and season with freshly cracked black pepper. Place trays in oven and bake for 15 minutes. Remove chickpeas. Using a spatula, turn chips over and cook for a further 10 minutes or until golden.

Step 3 of 4

Place couscous in a medium heatproof bowl. Add 1/2 cup boiling water and stir to combine. Cover and stand for 5 minutes or until liquid is absorbed. Uncover and stir with a fork to separate grains.

Step 4 of 4

Zest lemon, then juice. Whisk zest, juice and remaining oil in a small bowl. Empty salad mix into a large serving bowl. Top with potato, chickpea mixture, lentils, couscous and onion. Drizzle with dressing. Season with freshly cracked black pepper. Serve topped with feta.
