- 500grams Ben’s Original Microwave Mexican-style Rice
- 4 white wraps
- 1/3 cup mayonnaise
- 60grams baby spinach leaves
- 420grams Mexican-style no-added-salt 3-bean mix, drained, rinsed
- 93grams piquillo peppers, drained, halved
- 1 avocado, halved, sliced
- 1 carrot, coarsely grated
- 50grams Danish-style feta, crumbled
Description
Indulge in the vibrant flavours of Mexico with these quick, satisfying wraps packed with savoury rice, beans and salad.
Method
Step 1 of 3
Heat rice following packet instructions. Cool slightly.
Step 2 of 3
Meanwhile, heat a large frying pan over medium-high heat. Cook wraps, in batches, for 30-60 seconds on each side or until heated but not coloured.
Step 3 of 3
Place wraps on a flat surface. Spread mayonnaise over wraps. Top with spinach, rice, beans, peppers, avocado, carrot and feta. Fold in sides, then roll up to enclose filling. Cut in half. Serve.
