  • 200grams dried vermicelli noodles
  • 2tablespoons peanut oil
  • 500grams Woolworths lean pork mince
  • 1/2 bunch spring onions, sliced
  • 2tablespoons hoisin sauce
  • 1/4 cup salt-reduced soy sauce
  • 3 cloves garlic, crushed
  • 425grams stir-fry mixed vegetables, drained
  • 410grams Woolworths baby corn spears, drained, chopped
  • 1 bunch bok choy, coarsely chopped
  • 1 long red chilli
  • 1/4 cup fried shallots

Description

After a quick and easy dinner option or an easy salad to feed the family? Get carried away and enjoy the symphony of flavours in this scrumptious noodle dish.

Method

Step 1 of 4

Place noodles in a heatproof bowl. Cover with boiling water. Stand for 10 minutes or until soft. Drain.

Step 2 of 4

Heat oil in a large frying pan over medium-high heat. Add pork and cook, stirring to break up any lumps, for 5 minutes or until browned. Add white part of the onion, reserving green part, and cook, stirring, for 5 minutes or until onion softens.

Step 3 of 4

Combine hoisin, soy and garlic in a small bowl. Add sauce to pork in pan along with vegetables, corn, bok choy and 2 cups water. Bring to a simmer. Cook for 2 minutes or until bok choy wilts.

Step 4 of 4

Thinly slice chilli. Stir noodles through pork mixture. Divide among bowls. Top noodle mixture with chilli, fried shallots and reserved onion. Serve.
