- 375grams La Molisana Pastifico Extra Di Lusso Linguine
- 1/3 cup extra virgin olive oil
- 500grams uncooked peeled prawns with tails intact
- 3 cloves garlic, thinly sliced
- 250grams cherry tomatoes, halved
- 1/2teaspoons dried chilli flakes
- 1/3 bunch basil, leaves picked
- 1 lemon, zested, cut into wedges
Description
For a taste of summer, ring in the longer days and warmer nights with a dish that's fit for an al fresco feast.
Method
Step 1 of 3
Cook pasta following packet instructions. Drain, reserving 2/3 cup cooking liquid.
Step 2 of 3
Meanwhile, heat 1 tbs oil in a large frying pan over high heat. Cook prawns for 3 minutes until cooked. Remove from pan. Heat 1 tbs oil in same pan. Cook garlic and tomatoes, stirring occasionally, for 1-2 minutes or until softened. Return prawns to pan with pasta, chilli, half of the basil and reserved cooking liquid. Toss to combine.
Step 3 of 3
Divide pasta among bowls. Drizzle with remaining oil. Sprinkle with remaining basil and lemon zest. Serve with lemon.
