  • 1 cup long-grain white rice
  • 1tablespoons canola oil
  • 500grams chicken breast fillets, chopped
  • 175grams MasterFoods Chipotle Chicken Meal Starter
  • 420grams no-added-salt salt kidney beans, drained, rinsed
  • 420grams no-added-salt corn kernels, drained, rinsed
  • 1/4 cup low-fat Greek-style natural yoghurt
  • 1/4 bunch coriander, leaves picked

Description

Make dinnertime an effortless delight with this high-protein chipotle chicken that will satisfy everyone's cravings.

Method

Step 1 of 3

Cook rice following packet instructions.

Step 2 of 3

Meanwhile, heat oil in a large non-stick frying pan over medium heat. Add chicken and cook, stirring, for 5 minutes or until browned. Add meal starter, beans and corn and cook, stirring, for 2 minutes or until heated.

Step 3 of 3

Spoon rice and chicken onto plates. Top with yoghurt and coriander. Serve.
