  • 1 cup SunRice medium-grain white rice
  • 500grams Woolworths prep, set & go stir-fry mixed vegetables
  • 1 lemon
  • 1/4 punnet dill, leaves chopped
  • 1tablespoons MasterFoods lemon pepper seasoning
  • 4 freshwater basa fillets, thawed
  • 2teaspoons extra virgin olive oil

Description

An easy weeknight dinner that also tastes divine, savour this fish seasoned with aromatic spices, paired with a refreshing lemon and dill-infused rice salad.

Method

Step 1 of 4

Cook rice following packet instructions. Transfer to a large bowl. Set aside to cool slightly.

Step 2 of 4

Meanwhile, cook vegetables following packet instructions. Set aside to cool slightly.

Step 3 of 4

Finely grate half of 1 lemon. Cut remaining lemon into wedges. Add vegetables, dill and three-quarters of the zest to the rice. Season and toss to combine.

Step 4 of 4

Sprinkle seasoning over fish. Heat half of the oil in a large non-stick frying pan over medium-high heat. Add half of the fish and cook for 2 minutes each side or until golden and cooked through. Repeat with remaining oil and fish. Divide fish and rice among serving plates. Sprinkle with remaining zest. Serve with lemon.
