Description
Dig into the flavours of the Mediterranean with plant-based kofta, chargrilled pita and tangy tzatziki. This satisfying weeknight meal will certainly get everyone’s approval.
Method
Step 1 of 3
Combine mince, garlic and allspice in a medium bowl. Divide mixture into four portions. Shape each portion into an oval. Thread onto four metal skewers.
Step 2 of 3
Heat a chargrill or frying pan over medium heat. Brush pita with half of the oil and cook for 1-2 minutes or until slightly charred. Brush kofta with oil and cook for 8 minutes, turning, or until browned and cooked.
Step 3 of 3
Place pita on a serving board. Top with tzatziki, lettuce, cucumber, tomato, radish, kofta and mint. Serve with lemon.
