  • 3/4 cup Woolworths panko breadcrumbs
  • 2/3 cup tzatziki
  • 6 chicken tenderloins
  • 125grams cherry tomatoes, halved
  • 2tablespoons pitted Kalamata olives, coarsely chopped
  • 50grams Woolworths Greek-style feta, coarsely crumbled
  • 1/4 bunch continental parsley
  • 1/2 head little gem lettuce, leaves separated
  • 1 Lebanese cucumber, thickly sliced
  • 4 brioche buns, split
  • 5mL extra virgin olive oil cooking spray

Description

Satisfy your cravings in minutes with this flavourful chicken burger loaded with Greek salad. The succulent chicken is effortlessly cooked in an air fryer for a crispy treat.

Cooking tip:

If you don’t have an air fryer, place chicken on a large baking tray and cook at 180°C for 25 minutes or until cooked and golden.

Method

Step 1 of 4

Preheat a 5.75L air fryer to 180°C. Place breadcrumbs in a shallow dish. Combine half of the tzatziki with 2 tbs water in a small bowl.

Step 2 of 4

Working with 1 tenderloin at a time, dip chicken in tzatziki mixture, then coat in breadcrumbs. Place on a large plate. Repeat with remaining chicken, tzatziki mixture and breadcrumbs.

Spray both sides of chicken with oil. Place chicken, in a single layer, in the air-fryer basket. Cook for 15 minutes or until light golden. Cut 2 chicken pieces in half crossways.

Step 4 of 4

Place tomato, olives, feta and parsley in a medium bowl. Season and toss to combine. Spread reserved tzatziki on bun bases and lids. Divide lettuce and cucumber among bun bases. Top with chicken and tomato mixture. Top with bun lids. Serve.
