  • 1/4 bunch continental parsley, leaves picked
  • 350grams Woolworths market value meatballs
  • 420grams Woolworths no-added-salt lentils, rinsed
  • 1 large carrot, coarsely grated
  • 1/2 cup Woolworths panko breadcrumbs
  • 1tablespoons Woolworths Moroccan seasoning
  • 2 eggs, lightly beaten
  • 2 sheets Woolworths frozen puff pastry, partially thawed
  • 1tablespoons poppy seeds
  • 1 cup tomato relish

Description

Succulent meatballs are infused with fragrant spices and wrapped in flaky pastry, transporting your tastebuds to Morocco. Whip up these easy homemade meatball sausage rolls for lunch or dinner.

You can add any leftover vegetables to the sausage mixture, such as finely chopped celery, shredded baby spinach leaves or frozen peas.

Method

Step 1 of 3

Preheat oven to 220°C/200°C fan-forced. Grease and line a baking tray with baking paper. Coarsely chop half of the parsley. Combine meatballs, lentils, carrot, breadcrumbs, seasoning, half of the beaten egg and chopped parsley in a large bowl.

Step 2 of 3

To make 2 sausage rolls at a time, place a sheet of pastry on a clean work surface. Shape half of the mixture into a 20cm-long log and place at one edge of pastry. Roll pastry up to enclose filling. Cut in half. Repeat with remaining meatball mixture and pastry to make 4 rolls in total. Place on prepared tray. Brush with remaining egg. Sprinkle with poppy seeds. Bake for 25 minutes or until cooked and golden-brown.

Step 3 of 3

Place sausage rolls on plates. Sprinkle with remaining parsley. Serve with relish.
