  • 35grams Woolworths taco seasoning
  • 2tablespoons extra virgin olive oil
  • 4 Woolworths flour tortillas
  • 2 limes
  • 1/2 cup Woolworths traditional mayonnaise
  • 1/4 iceberg lettuce, shredded
  • 2 carrots, shredded
  • 1/2 bunch coriander, sprigs picked

Description

A tasty spin on a stuffed tortilla, this smashed version is a delicious way to use up low-cost meatballs. Top tortillas with your favourite salad toppings for a flavour fiesta.

Swap tip:
No taco seasoning? Try adding 2 tsp ground cumin and 2 tsp ground paprika instead.

Method

Step 1 of 3

Combine meatballs and seasoning in a bowl. Divide into four equal portions. Shape each portion into a 10cm-wide patty.

Step 2 of 3

Heat 2 tsp oil in a large frying pan. Add 1 patty and top with 1 tortilla. Cook for 4 minutes or until patty is almost cooked through. Turn and cook for a further 2 minutes or until tortilla is golden. Repeat with remaining oil, patties and tortillas to make 4 in total.

Step 3 of 3

Zest and juice both limes, reserving 1 tbs zest. Combine juice, mayonnaise and remaining zest in a bowl. Top tortillas with lettuce, carrot and coriander. Drizzle with lime mayonnaise. Serve sprinkled with reserved zest.
