  • 1 1/3 cups plain “00” flour
  • 500grams fresh ricotta
  • 2 eggs, lightly beaten
  • 100grams parmesan, finely grated
  • 1tablespoons extra virgin olive oil
  • 1 small brown onion, finely chopped
  • 2 cloves garlic, crushed
  • 700grams Macro Organic passata
  • 1/2 bunch basil, leaves picked

Description

Just like Nonna makes! This ricotta gnocchi recipe is easy to prepare and simply delicious. Spoil yourself with a delicious taste of Italy.

Method

Step 1 of 4

Lightly dust a baking tray with 1 tbs flour. Combine ricotta, egg, half of the parmesan and remaining flour in a large bowl. Divide ricotta mixture into 4 equal portions. To make 8 gnocchi, shape 1 portion of ricotta into a 24cm-long log. Using a small sharp knife, cut log into 8 equal pieces. Place on prepared tray. Repeat with remaining ricotta mixture. Cover and refrigerate for 15 minutes.

Bring a large saucepan of water to the boil over high heat. Reduce heat to medium-high. Cook gnocchi, in batches, for 2-3 minutes or until they float to the surface. Drain gnocchi and set aside on a plate.

Step 3 of 4

Heat oil in a large deep-frying pan over medium-high heat. Add onion and garlic and cook, stirring, for 2-3 minutes or until softened. Add passata and 1/2 cup water and bring to the boil. Reduce heat and simmer for 3 minutes or until thickened slightly.

Step 4 of 4

Toss gnocchi with sauce. Transfer to a serving platter. Top with remaining parmesan and basil. Serve.
