  • 1 quantity basic pizza dough

  • 5mL extra virgin olive oil cooking spray
  • 280grams baby spinach leaves
  • 2 cloves garlic
  • 400grams Woolworths diced tomatoes with basil & oregano
  • 1 large tomato, halved, sliced
  • 250grams fresh ricotta, crumbled
  • 100grams pepperoni, cut into 12 slices
  • 1 1/2 cups Woolworths shredded mozzarella
  • 1/2 cup basil leaves

Description

Indulge in the savoury fusion of melted cheese, pepperoni and spinach wrapped in a golden-brown crust. This delectable calzone is ideal for entertaining friends and family.

Method

Step 1 of 4

Preheat oven to 240°C/220°C fan-forced. Grease and line a large baking tray with baking paper. Divide pizza dough into 4 equal portions. Place on a lightly floured tray, cover with a tea towel and set aside for 1 hour or until nearly doubled in size.

Step 2 of 4

Heat a large deep-frying pan over low heat. Spray spinach and garlic with oil. Add spinach and garlic to pan and cook, stirring, for 1-2 minutes or until spinach wilts. Transfer to a large bowl. Cool slightly.

Step 3 of 4

Roll each dough portion out between 2 sheets of baking paper to a 20cm disc. Top dough with canned tomato, then sliced tomato. Top with a layer of spinach, then ricotta, pepperoni and mozzarella. Fold dough over to create a semi-circle, pushing down the edges to secure. Gently press edge with a fork to seal. Place on prepared tray and set aside for 30 minutes or until risen slightly.

Step 4 of 4

Spray calzones with oil. Using a small sharp knife, cut 3-5 slits in the top of each calzone. Bake for 20-25 minutes or until golden brown. Serve sprinkled with basil.
