  • 1 quantity basic pizza dough

  • 500grams Woolworths frozen mixed berries, cut larger berries in half
  • 1 1/2tablespoons cornflour
  • 1 orange zested, juiced
  • 450grams Woolworths cream cheese, softened slightly
  • 1/2 bunch mint, leaves picked

Description

A sweet and tangy treat, this mixed berry cheesecake pizza combines a creamy cheesecake filling with a mixed berry topping, all on a crispy pizza crust.

Method

Step 1 of 4

Make pizza dough following basic pizza dough recipe instructions on page 84, but reducing flour to 21/2 cups and adding in hazelnut meal, and replacing salt with 2 tbs caster sugar. Cover and stand in a warm area for 1 hour or until doubled in size. Divide into 2 equal portions. Set aside to prove for a further 30 minutes or until risen.

Step 2 of 4

Preheat oven to 240°C/220°C fan-forced. Grease and line 2 baking trays with baking paper. Combine berries, 2 tbs remaining caster sugar, cornflour and orange juice in a medium saucepan over medium heat. Cook, stirring, for 8 minutes or until sauce thickens.

Step 3 of 4

Process cream cheese and remaining caster sugar until smooth. Divide pizza dough in half. Place on prepared trays. Using your hands, gently indent the crust and push dough towards the outer edges to form a round base. Continue this process, turning and stretching, until the pizza bases measure a 24cm disc.

Step 4 of 4

Spread pizza bases with cream-cheese mixture. Top with berry mixture. Bake for 15-18 minutes or until golden brown and bases are crispy. Serve topped with mint and orange zest.
