  • 600grams Woolworths white choc mud cake
  • 1/3 cup pre-made vanilla frosting
  • 1teaspoons lemon extract
  • 1/4 cup pure icing sugar, sifted
  • 500grams ready to roll coloured fondant
  • 21grams black writing icing
  • 30grams Woolworths white cooking chocolate
  • 1 punnet rosemary

Description

Savour the magic of the festive season with these easy-to-make snowman cake truffles, where each bite is a journey to a winter wonderland.

Prep tip:
Make the truffles and leave them in an air-conditioned room so they hold their shape and maintain their icing sugar coating before consumption.

Method

Step 1 of 4

Break cake, including icing, into 2cm pieces into a large bowl. Using fingertips, break into loose crumbs to resemble breadcrumbs. Add frosting and lemon. Stir through until well combined.

Step 2 of 4

Working with 1 tablespoonful of mixture at a time, roll into 10 balls. Using the remaining mixture and working with 2 tablespoonfuls of mixture at a time, roll into 10 larger balls.

Step 3 of 4

Place icing sugar on a plate. Roll balls in icing sugar to coat well. Place the small balls on top of the large balls and secure with a toothpick, trimming toothpick if necessary.

Step 4 of 4

Remove yellow and red fondant from packet. Knead 2 tsp yellow and 1 tsp red together to make orange fondant. Shape into 10 carrot noses. Set aside to dry slightly. Pipe eyes onto each snowman using black icing. Melt chocolate following packet instructions. Use melted chocolate to attach carrot noses. Cut rosemary into 20 arms. Stick arms into the larger balls. Store in a cool, dry place. Serve.
