  • 1 cup Woolworths mixed fruit
  • 1/2 cup Woolworths brown sugar
  • 1 Granny Smith apple, peeled, coarsely grated
  • 2tablespoons brandy
  • 1teaspoons mixed spice
  • 7 sheets frozen shortcrust pastry, just thawed
  • 1/2 cup Woolworths icing sugar mixture
  • 2teaspoons lemon juice

Description

These easy fruit mince stars – featuring juicy fruits, sweet spices and a touch of brandy, wrapped in flaky pastry – are perfect for any white Christmas setting.

Make the stars on the day or up to 1 day ahead. Store in an airtight container.

Method

Step 1 of 4

Combine fruit, sugar, apple, brandy and mixed spice in a small bowl. Cover and set aside overnight to soak. Place in a strainer set over a bowl. Stir the mixture to gently remove excess liquid (about 2 tbs).

Step 2 of 4

Preheat oven to 180°C/160°C fan-forced. Line 2 large baking trays with baking paper. Using 1 large star cutter (8.5cm wide at largest point) and 1 smaller star cutter (7cm at widest point), cut 6 large stars and 4 small stars on each pastry sheet.

Step 3 of 4

Place 1 tsp fruit mince on half of the large stars and ¾ tsp fruit mince on half of the small stars. Top with the remaining stars. Seal the edges well by rotating the stars in your hands to press them down. Press a fork along the edges. Bake in 2-3 batches for 15 minutes or until golden.

Step 4 of 4

Set aside to cool completely. Mix icing sugar and juice in a small bowl until well combined. Drizzle over the stars. Set aside to set completely. Serve.
