- 375grams Woolworths unsalted butter, chopped, at room temperature
- 1/2 cup caster sugar
- 2 egg yolks
- 2teaspoons Woolworths vanilla sugar
- 3 1/2 cups self-raising flour
- 2 drops brandy essence
- 120grams Woolworths slivered almonds
- 1/2 cup icing sugar mixture
Description

Swap tip:Instead of brandy essence, you can add 2 tbs brandy to the dough.
Method
Step 1 of 3
Using an electric mixer, beat butter and caster sugar in a large bowl until pale and creamy. Add egg yolks and beat until combined. Stir in vanilla sugar, flour and essence to form a soft dough. Divide into 2 equal portions. Shape each portion into a disc. Cover and refrigerate for 30 minutes.

Preheat oven to 160°C/140°C fan-forced. Grease and line 2 large baking trays with baking paper. For each dough portion, roll dough out between 2 sheets of baking paper until 15mm thick. Using a 5cm-round pastry cutter, cut 15 discs from dough. Place discs on a prepared tray, leaving room for spreading. Press half of the almonds into the discs. Repeat with remaining dough portion and almonds. Cover and refrigerate for 10 minutes.

Bake biscuits for 15-20 minutes or until lightly golden. Cool completely on trays. Serve dusted with icing sugar.
