  • 120grams dark chocolate (45 per cent), chopped
  • 1/4 cup plain flour
  • 2tablespoons cocoa powder
  • 1/2teaspoons baking powder
  • 1 free range egg
  • 1/4 cup caster sugar
  • 1/4 cup brown sugar
  • 3/4 cup cherry jam
  • 200milliliter Bulla Dollop Cream

Description

These richly indulgent, creamy Black Forest-inspired treats are easy to share and guaranteed to win hearts.

Method

Step 1 of 4

Preheat oven to 190°C/170°C fan-forced. Line 2 large baking trays with baking paper.

Step 2 of 4

Place butter and 100g chocolate in a microwave-safe bowl. Microwave on high for 1 minute, stirring halfway, or until melted and smooth. Keep warm. In a separate bowl, combine flour, cocoa and baking powder.

Step 3 of 4

Using an electric stand mixer fitted with a whisk attachment, whisk egg and sugars for 4 minutes or until light and fluffy. Add melted chocolate mixture, then mix until combined. Fold in flour mixture. Using 1 levelled tbs mixture at a time, spoon mixture onto trays, 4cm apart. Bake for 10 minutes or until cookies are shiny and hard around the edges. Cool cookies completely on trays.

Step 4 of 4

Spread a little jam on top of each cookie, then top with a dollop of cream. Grate remaining chocolate over cookies. Serve.
