  • 3 avocados, flesh removed
  • 2 limes, juiced
  • 425grams refried beans
  • 420grams Woolworths corn kernels, rinsed, drained well
  • 300grams Woolworths chunky tomato medium salsa
  • 600milliliter Woolworths sour cream
  • 1/4teaspoons Woolworths smoked paprika
  • 1/4 bunch coriander, sprigs removed
  • 350grams Woolworths original salted corn chips

Description

A fiesta in a bowl, this vibrant Mexican layered dip of refried beans, corn, guacamole, salsa, cheese and sour cream will impress any crowd during footy finals.

Method

Step 1 of 4

Using the back of a fork, mash avocado in a bowl. Add lime juice. Season. Mix until well combined.

Step 2 of 4

Spread beans over the base of a large glass serving or trifle bowl. Top with corn, then spread to cover beans.

Step 3 of 4

Add salsa in dollops on top of beans. Using the back of a spoon, gently spread to cover corn. Top with avocado, then sour cream.

Step 4 of 4

Sprinkle with paprika. Top with coriander. Serve with corn chips.
