- 2teaspoons extra virgin olive oil
- 500grams Woolworths beef mince
- 500grams Leggo's bolognese with chunky tomato, garlic & herbs pasta sauce
- 120grams Woolworths baby spinach & rocket
- 150milliliter Woolworths sour cream
- 20grams Woolworths parmesan, finely grated
Description

Method
Step 1 of 4
Preheat oven to 210°C/190°C fan-forced. Wash and dry potatoes. Pierce each potato several times with a fork. Place potatoes on a microwave-safe plate and microwave for 10 minutes, turning halfway through, until almost tender.
Step 2 of 4
Heat 1 tsp oil in a large frying pan on medium heat. Add mince, cook for 5 minutes, breaking up any lumps with a wooden spoon. Add pasta sauce and stir to combine. Simmer for 10 minutes or until thickened. Set aside.
Step 3 of 4
Line a baking tray with baking paper. Remove potatoes from the microwave and carefully place on baking tray. Bake in the oven for 10-15 minutes or until golden and tender. Stand for 5 minutes to cool slightly.
Step 4 of 4
Place salad leaves in a bowl. Drizzle with remaining oil and season. Toss to coat. Cut a cross on the top of each potato and using a clean tea towel, gently squeeze to open. Top with mince mixture, sour cream, parmesan and a little of the salad leaves. Serve with remaining salad.
