  • 375grams penne pasta
  • 250grams cherry tomatoes
  • 1 red onion, cut into wedges
  • 2tablespoons extra virgin olive oil
  • 2tablespoons balsamic vinegar
  • 450grams Woolworths Italian feta & rosemary lamb sausages
  • 2 cloves garlic, crushed
  • 60grams baby leaf spinach
  • 1/2 bunch basil, leaves picked
  • 1/2 cup finely grated parmesan

Description

Stuck in a cooking rut? This speedy, flavour-packed Italian sausage penne dish makes a great weeknight dinner.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Grease and line a baking tray with baking paper. Cook pasta in a large saucepan of boiling water for 12 minutes or until tender. Drain and return to pan.

Step 2 of 3

Meanwhile, place tomatoes and onion on prepared tray. Drizzle 1 tbs oil and balsamic vinegar over tomatoes. Roast for 8 minutes or until softened slightly.

Step 3 of 3

Remove sausage mince from casings and break into bite-sized pieces. Heat remaining oil in a large frying pan over medium-high heat. Add sausage and cook, stirring, for 5 minutes or until cooked and browned. Add garlic, pasta and roast tomatoes and stir to combine. Add spinach and cook, stirring, for 1-2 minutes or until spinach wilts. Season. Remove from heat. Serve sprinkled with basil and parmesan.
