  • 2 lemons, 1 juiced, 1 cut into wedges (wedges to serve)
  • 1/4 cup teriyaki sauce
  • 1/4 cup extra virgin olive oil
  • 50grams kale, chopped
  • 1 stick celery, sliced
  • 1tablespoons sesame seeds, toasted
  • 2 cups cooked brown rice, warmed
  • 2 bunches broccolini, trimmed
  • 300grams Tassal Cooked Tassie Salmon, flaked
  • 1 long red chilli, thinly sliced

Description

Hero salmon in this delicious, nutritious and easy mid-week meal packed with Asian flavours and fresh vegetables.

Method

Step 1 of 4

Bring a medium saucepan of water to the boil over high heat.

Step 2 of 4

Juice 1 lemon. Cut remaining lemon into wedges. Whisk juice, sauce and oil in a small jug and set aside. Place kale, celery and half of the sesame seeds in a large bowl. Add rice, then toss to combine.

Step 3 of 4

Cook broccolini in boiling water for 2 minutes or until bright green and tender. Drain.

Step 4 of 4

Divide rice salad among bowls. Top with broccolini, salmon and a sprinkling of red chilli. Drizzle over teriyaki dressing. Serve with lemon wedges.
