  • 2 bunches asparagus, cut into 5cm lengths
  • 500grams chicken thigh fillets, cut into 2cm pieces
  • 2 cloves garlic, crushed
  • 2tablespoons kecap manis
  • 2tablespoons hoisin sauce
  • 1/2 cup roasted almonds
  • 2 spring onions, sliced
  • 500grams Woolworths microwave jasmine rice, heated
  • 1 long red chilli, sliced

Description

Ready in 20 minutes, this delicious chicken stir-fry with asparagus and almond will become a weekly staple.

Method

Step 1 of 3

Heat oil in a large frying pan over medium-high heat. Add asparagus and cook, stirring, for 1-2 minutes or until bright green. Transfer to a plate.

Step 2 of 3

Add chicken and garlic to pan. Cook, stirring, for 5 minutes or until almost cooked and browned. Add kecap manis and hoisin and stir to combine.

Step 3 of 3

Add almonds, asparagus and half of the onion to pan and cook, stirring for 1 minute or until hot. Divide rice among bowls. Spoon over chicken mixture and sprinkle with chilli and remaining onion. Serve.
