- 500grams kofta minceingredient tip
- 12 pre-soaked bamboo skewers
- 2tablespoons extra virgin olive oil
- 2 Lebanese cucumbers
- 1 lemon, cut in half
- 1 cup Woolworths couscous
- 420grams Woolworths no-added-salt chickpeas, drained and rinsed
- 250grams cherry tomatoes, halved
- 1/2 bunch coriander, leaves picked
- 1 cup Woolworths Greek-style natural yoghurt
- 1/2 oakleaf green lettuce
Description
These hearty kofta bowls with couscous, chickpeas, cherry tomatoes, lettuce and cucumber deliver satisfying crunch and flavour in every bite. Use leftover kofta mince to stretch the budget.
Method
Step 1 of 3
Divide mince into 12 portions. Shape into ovals on skewers, squeezing gently to secure. Heat a large chargrill pan over medium-high heat. Brush koftas with 1 tbs oil. Grill, turning occasionally, for 2-3 minutes or until browned and cooked.

Meanwhile, coarsely chop 1 cucumber, then grate the remaining cucumber. Juice 1 half of the lemon, then cut remaining half into wedges. Place couscous in a heatproof bowl and pour over 1 cup boiling water. Cover and stand for 10 minutes or until liquid is absorbed. Stir with a fork to separate grains.

Add chickpeas, tomatoes, chopped cucumber, ½ of the coriander, lemon juice and remaining oil to the couscous and mix well. Season. Combine grated cucumber and yoghurt in a bowl. Spoon couscous mixture into bowls. Add lettuce, koftas and yoghurt mixture. Sprinkle with remaining coriander. Serve with lemon wedge.
