  • 1.50kilograms beef mince
  • 1 bunch continental parsley, leaves picked, coarsely chopped
  • 3 cloves garlic, crushed
  • 1 large brown onion, coarsely grated
  • 1/4 cup Woolworths Moroccan seasoning
  • 2teaspoons mixed spice
  • 2 Woolworths free range eggs
  • 12 pre-soaked bamboo skewers
  • 5milliliter extra virgin olive oil cooking spray
  • 200grams tabouli, to serve
  • 200grams hummus, to serve

Description

Try this freezer-friendly kofta mince recipe to get ahead with meal prep for the week. A great way to stretch the budget!

Serving tip:
Shape mince into ovals and thread onto skewers. Spray with oil. Preheat a barbecue or chargrill pan over medium-high heat. Cook koftas, in batches, turning occasionally, for 5-8 minutes or until browned and cooked. Serve with tabouli and hummus.

Combine beef, parsley, garlic, onion, Moroccan seasoning, mixed spice and eggs in a large bowl. (If storing, divide among 3 airtight containers. Store in the fridge for up to 2 days or label, date and freeze for up to 3 months. When ready to use, thaw frozen mince in fridge overnight).
