  • 500grams Woolworths beef mince
  • 1/2 cup fresh breadcrumbs
  • 1tablespoons smoked paprika
  • 1 free range egg
  • 2 cloves garlic, crushed
  • 1 1/2 cups wholemeal couscous
  • 2 lemons
  • 1/2 cup Greek-style natural yoghurt
  • 2 Lebanese cucumbers, finely chopped
  • 1/2 bunch continental parsley, leaves picked and coarsely chopped
  • 2 spring onions, thinly sliced
  • 2tablespoons extra virgin olive oil

Description

Send tastebuds into a tailspin with this affordable, flavour-packed beef kofta dish. Ready in four simple steps, it's a perfect recipe to add to your weekly rotation.

Method

Step 1 of 4

Combine mince, breadcrumbs, 2 tsp paprika, egg and garlic in a large bowl. Using slightly damp hands, shape mixture into 8 oval-shaped logs. Thread onto skewers.

Step 2 of 4

Preheat a chargrill over medium heat. Brush mince with 1 tbs oil. Grill, turning occasionally, for 8-10 minutes or until cooked through and browned. Transfer to a plate.

Step 3 of 4

Meanwhile, place couscous and remaining oil in a large heatproof bowl. Pour over 11/2 cups boiling water. Cover and stand for 5 minutes or until liquid is absorbed. Fluff with a fork to separate grains. Season.

Step 4 of 4

Zest lemons. Juice 1 lemon. Cut remaining lemon into halves.Place yoghurt in a bowl. Add zest and juice. Stir to combine. Season. Spoon couscous onto plates. Top with cucumber, parsley, onion and koftas. Sprinkle with remaining paprika. Serve with lemon yoghurt and lemon halves.
