  • 1 rustic white baguette, cut into 1cm slices
  • 1/2 cup extra virgin olive oil
  • 400grams Woolworths beef porterhouse steak with herb & garlic butter
  • 1 1/4 cups garlic aioli
  • 1/2 punnet chives, finely chopped
  • 1 pinch pepper

Description

These crostini make a perfect snack or a delightful appetiser for a party. With garlic butter, slices of medium-rare steak and a sprinkling of fresh chives, they're super moreish.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Place bread, in a single layer, on 2 large baking trays lined with baking paper. Place 1/3 cup oil in a small bowl. To create crostini, brush both cut sides of bread with oil. Season. Bake for 15 minutes, turning halfway through, or until bread is golden and crisp.

Drizzle each steak with 2 tsp remaining oil. Heat a large frying pan over medium-high heat. Cook steak for 2 minutes each side for medium-rare or until cooked to your liking. Working quickly, add one butter portion to pan. Cook for 30 seconds or until melted, then turn steaks in butter mixture to coat. Transfer steaks to a plate. Cover loosely with foil and rest for 5 minutes. Allow pan to cool, then return pan to low heat. Add remaining butter and oil. Cook for 1 minute or until golden and melted.

Thinly slice steak. Spread each crostini with a little aioli and arrange steak on top. Sprinkle with chives and season with pepper. Drizzle with melted butter mixture. Serve immediately.
