  • 1teaspoons dry yeast, fast action
  • 1teaspoons sea salt
  • 2 1/2tablespoons olive oil
  • 80grams cheddar, grated
  • 80grams mozzarella, grated
  • 60grams feta, crumbled
  • 1/2teaspoons cumin
  • 1 green capsicum, thinly sliced
  • 1 large egg, beaten
  • 4 large eggs
  • 1/2teaspoons sumac

Description

These delicious Turkish pides are oozing with cheese and topped with a perfectly cooked runny egg.

Method

Step 1 of 5

Tip the flour, sugar, yeast and salt into a large bowl and stir to combine. Add 80ml of warm water and 2 tablespoons of oil and mix to combine. Tip on to a lightly floured work surface and knead for 5 minutes until smooth and springy.

Step 2 of 5

Place in an oiled bowl and cover with a damp towel. Set aside to rise in a warm place for 1 hour.

Step 3 of 5

Pre-heat the oven to 180°C. Tip the dough on to a floured work surface and cut into 4 pieces. Roll each piece into an oval shape.

Step 4 of 5

Place the dough ovals on a lined baking tray and sprinkle a layer of cheese on top, followed by cumin and capsicums. Leave a border around the edges and roll up to form a crust. Brush the edges with beaten egg and bake for 12-15 minutes.

Step 5 of 5

With the back of a spoon make an indent in the middle of each pide and crack an egg in each. Bake for 6-7 more minutes until the eggs are set. Sprinkle with sumac and serve.
