- 1/2 bunch continental parsley, leaves picked, coarsely chopped
- 4 slices crusty bread, toasted

Description
With a creamy garlic, shallot and lemon sauce, these mussels bring big flavours to the bowl. Serve with some crusty bread for a full-bodied mealtime delight.
Method
Step 1 of 3
Heat butter in a large cast iron or heavy-based saucepan over low heat. Add shallots and garlic. Cook for 10 minutes, stirring, or until fragrant and softened. Add vodka, cream and lemon juice. Increase heat to high and bring to a simmer for 2 minutes.
Step 2 of 3
Add mussels and herbs. Stir to combine. Cook, covered, for 10 minutes or until mussels are cooked and open. (Shake pan to ensure mussels cook evenly, if necessary.) Discard any unopened mussels.
Step 3 of 3
Serve mussels with toasted crusty bread.
