  • 2 cloves garlic, crushed
  • 1/2 cup extra virgin olive oil
  • 1/2 bunch basil, leaves picked
  • 1 rockmelon, halved, cut into wedges
  • 100grams burrata, drained

Description

Full of flavour and texture, rockmelon, burrata, prosciutto and basil make an easy summer salad. This delicious recipe will become a new family favourite.

Swap tip:

If burrata is unavailable, use fresh mozzarella or bocconcini instead.

Method

Step 1 of 3

Heat a large non-stick frying pan over medium-high heat. Cook prosciutto, in batches, for 1-2 minutes each side or until crispy. Drain on paper towel. Finely chop.

Step 2 of 3

To make rocket dressing, process rocket, garlic, oil and half of the basil until almost smooth, adding 2 tbs warm water if needed. Season.

Step 3 of 3

Arrange rockmelon on a large serving plate. Top with burrata. Drizzle with rocket dressing. Serve sprinkled with prosciutto and remaining basil.
