  • 400grams Woolworths unsalted dry roasted luxury nut mix
  • 1tablespoons smoked paprika
  • 1tablespoons extra virgin olive oil
  • 2tablespoons chopped rosemary
  • 3 cups tropical fruit juice, chilled
  • 2 cups rum
  • 1 baby pineapple, half chopped, half cut into wedges
  • 125grams raspberries
  • 1/2 cup grenadine
  • 400milliliter coconut cream, chilled, whisked

Description

Don't throw a summer party without colada sunrises and spiced nuts. This delicious, tropical combo will instantly set the mood and brighten spirits.

Swap nuts for drained, rinsed canned chickpeas and roast for an extra 5 minutes.

Method

Step 1 of 2

Preheat oven to 200°C/180°C fan-forced. Grease and line a baking tray with baking paper. Combine nuts, paprika and oil in a large bowl. Transfer to prepared tray and spread out in a single layer. Roast, mixing occasionally, for 5-8 minutes or until golden. Cool. Add rosemary and stir to combine.

Step 2 of 2

Combine fruit juice and rum in a large jug. Divide 2-3 cups ice cubes among 6 x 1 3/4-cup-capacity (330ml) glasses. Add chopped pineapple and raspberries to glasses, then rum mixture. Carefully pour in grenadine. Slowly add coconut cream, pouring over the back of a spoon to settle on top. Garnish with pineapple wedges.
