Colada Sunrise with Spiced Nuts

- 400grams Woolworths unsalted dry roasted luxury nut mix
- 1tablespoons smoked paprika
- 1tablespoons extra virgin olive oil
- 2tablespoons chopped rosemary
- 3 cups tropical fruit juice, chilled
- 2 cups rum
- 1 baby pineapple, half chopped, half cut into wedges
- 125grams raspberries
- 1/2 cup grenadine
- 400milliliter coconut cream, chilled, whisked
Description
Don't throw a summer party without colada sunrises and spiced nuts. This delicious, tropical combo will instantly set the mood and brighten spirits.

Swap tip:Swap nuts for drained, rinsed canned chickpeas and roast for an extra 5 minutes.
Method
Step 1 of 2
Preheat oven to 200°C/180°C fan-forced. Grease and line a baking tray with baking paper. Combine nuts, paprika and oil in a large bowl. Transfer to prepared tray and spread out in a single layer. Roast, mixing occasionally, for 5-8 minutes or until golden. Cool. Add rosemary and stir to combine.
Step 2 of 2
Combine fruit juice and rum in a large jug. Divide 2-3 cups ice cubes among 6 x 1 3/4-cup-capacity (330ml) glasses. Add chopped pineapple and raspberries to glasses, then rum mixture. Carefully pour in grenadine. Slowly add coconut cream, pouring over the back of a spoon to settle on top. Garnish with pineapple wedges.
