- 3tablespoons honey
- 425grams lychees, tinned, in syrup
- 1 1/4 cup double cream
- 250grams Greek yoghurt
- 100grams pomegranate seeds
- 50grams pistachios, shelled and chopped

Description
This creamy mousse with lychees, pistachios and pomegranate makes an impressive dessert.
Method
Step 1 of 4
Place the gelatine in a heatproof bowl with 3 tablespoons of water. Set aside for 5 minutes to absorb. Place the bowl over a pan of simmering water and heat for 5 minutes, until the gelatin is a clear liquid. Stir in the honey.
Step 2 of 4
Place the lychees in a food processor and add 4 tablespoons of syrup. Blitz to a puree.
Step 3 of 4
Whisk the cream to soft peaks in a large bowl and gently fold in the yoghurt, lychee puree and gelatin and honey mix. Divide between 6 glasses and chill for 4 hours in the fridge.
Step 4 of 4
Top with pomegranate seeds and pistachios and serve.
