  • 2 lime, keep the juice and grate the zest into strings
  • 30grams caster sugar
  • 150grams strawberries, hulled and chopped
  • 150grams passion fruit, just flesh and seeds
  • 30grams brown sugar
  • 80grams lemon curd
  • 1/3 cup whipped cream, whipped

Description

An icy and delicate dessert packed with sharp ingredients.

Method

Step 1 of 5

In a mixing bowl, combine the lime zest strings with the caster sugar and 1 tsp of lime juice, combine fully and set to one side.

Step 2 of 5

In a blender, combine the strawberries with the passionfruit, the rest of the lime juice, brown sugar and lemon curd.

Step 3 of 5

Blend until mixed well and transfer to a freezer suitable container.

Step 4 of 5

Freeze for 4 hours but every 30 minutes, take out and mix it up using a fork.

Step 5 of 5

When its ready to serve, divide into serving bowls, top with whipped cream and garnish with sugared zest strings.
