  • 1/2 rockmelon
  • 1tablespoons ginger, shredded
  • 8 lychees, peeled, stones removed, halved
  • 2 sprig mint
  • 1/2 pineapple
  • 1 mango, sliced
  • 1/4 cup lime juiced
  • 2teaspoons lime zested
  • 1/2 cup caster sugar

Method

Step 1 of 2

Combine 1/2 cup water, sugar, ginger and mint in a small saucepan and stir over low heat until sugar has dissolved. Bring to the boil, reduce heat and simmer over medium heat for 5-6 minutes or until mixture is syrupy. Add lime juice and simmer a further 1 minute. Cool slightly, strain then refrigerate until cold.

Slice mango, rockmelon and pineapple. Combine in a large bowl with lychees. Pour cold syrup over fruit and garnish with lime zest and mint leaves to serve.
